    Everday Recipes - Chocolate-topped butterscotch dessert bars

    It's fun to say. They're fun to make. And, thanks to the chocolate, butterscotch and peanut butter, they're even more fun to eat.
    Ingredients

    • 1 cup light corn syrup
    • 1 cup sugar
    • 1 cup peanut butter
    • 6 cups Kellogg's® Cocoa Krispies® cereal
    • OR
    • 1 package (6 oz., 1 cup) semi-sweet chocolate morsels
    • or 6 cups Kellogg's® Rice Krispies® cereal
    • 1 cup butterscotch chips

      To experience the timeless flavor, make your Rice Krispies Treats® squares with the original Rice Krispies® brand cereal.

      Where to buy


    1. Place corn syrup and sugar into 3-quart saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil. Remove from heat. Stir in peanut butter. Mix well. Add KELLOGG'S RICE KRISPIES cereal. Stir until well coated. Press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Set aside.

    2. Melt chocolate and butterscotch chips together in 1-quart saucepan over low heat, stirring constantly. Spread evenly over cereal mixture. Let stand until firm. Cut into 2 x 1-inch bars when cool.

    Note: Before measuring the corn syrup, coat your measuring cup with cooking spray--the syrup will pour easily out of the cup.

    comments-2582. My recipe for Scotcheroos is a very old magazine clipping, and it calls for 1 10oz. bag of regular or mini marshmallows instead of the corn syrup and sugar. The 6 cups of Rice Krispies is replaced with 5 cups of cereal, and 1 cup of peanuts; I usually use low salt dry roasted. I've used both semi sweet chocolate and milk chocolate morsels with great results. I take these to potlucks and parties whenever I don't have time to bake, or when it's too hot to turn the oven on. They always disappear quickly!

    comments-3893. Because the Scotcheroos use corn syrup, sweetened chocolate, sweetened butterscotch, and sweetened peanutbutter, I tried cutting the sugar to 1/2 cup. It was still extremely sweet. I cut the sugar out altogether the last time and this treat is still extrememly (deliciously) sweet. The cup of sugar is excess and not needed.

    comments-3169. I made the Scotcheroos before and somr people thought that the butterscotch made it to Rich and sweet. Last night made them and instead of the 1 cu pbuttercotch morsels I replaced it with 1 cup of peanut Butter Chips. And it was a bigger hit. Just thought I would share that If you don't like Buttercotch replace with peanut butter!

    comments-7007. I got tired of trying to cut through the gooey goodness, so I started making these in mini muffin tins! Press the cereal mixture into the cups (no paper liners, obviously). To put on the chocolate topping, spoon it into a zip-top bag, snip off the tip of one corner, and pipe it on like you're decorating a cake! Easy-peasy!

    comments-6547. When I make them I do the chocolate/butterscotch a bit different. After you have spread the rice krispies in the pan; sprinkle a mixture of the semi-sweet chocolate chips and the butterscotch chips over the top. Put in the oven on a low temp. until the chips are super glossy. Take out and very gently smear/spread a spoon over swirling the melting chips over the rice krispies. It tastes amazing and looks great too!

    comments-3753. This is something my mom always made for me on Christmas but, I couldn't find te recpe on here. It's rice krispie treats with peppermint candies in it..You crush up the candies really small and add then when you melted the marshmallows and add the cereal. It's divine..

    comments-4014. These are a favorite childhood memory from the late 60's and early 70's. Seems like the original recipe had the chocolate layer sandwiched between the cereal mix, rather than topping it. That's the way I remember it, so that's the way I'm going to try it!

I think I mixed the butterscotch and peanut butter with the rice krispies and then put the chocolate on top. I would LOVE to have that recipe. Reminds me of my youth.

Here's what I successfully did: 3tbl butter, 4 C mini marshmallows, 1/2 C butterscotch chips; melt on low together then stir in 6 C Rice Krispies. Top with the chocolate and 1/2 butterscotch chips called for....or the full 1 cup. (I thought it would be too sweet) Funny sideline, my uncle divorced my Aunt who was nicknamed the first 6 letters of this cookie, and then married Helen. Helen's specialty at Easter dinner is "s___ oos". We decided that just wouldn't do and renamed the treat "Helerroos"!
